Neutralisation of 70% food-grade acetic acid is carried out according to the enterprise’s process instructions, taking into account the concentration, solution volume and subsequent waste handling. Alkaline reagents are usually used to neutralise acetic acid, introduced gradually, with stirring and mandatory pH control. In food production it is important not only to reduce acidity but also to prevent untreated residue from entering the sewer or work areas. After the reaction, the solution is checked, further diluted if necessary, or handed over for disposal according to internal regulations.
Neutralisation of acetic acid with sodium hydroxide is used under controlled conditions when the acid needs to be converted into a salt — sodium acetate — and water. For 70% food-grade acetic acid, the process requires careful dosing of the alkali, because the reaction is accompanied by heat release. Sodium hydroxide is added in small portions, with stirring and regular pH measurement. In industrial practice this operation cannot be done “by eye”: excess alkali can make the solution aggressive from the other direction and create a risk for equipment, personnel and effluents.
The acetic acid neutralisation reaction is the interaction of the acid with a base, producing a salt and water. If sodium hydroxide is used, the final product is sodium acetate. For enterprises purchasing 70% food-grade acetic acid, what matters is not only the chemical formula but also the controllability of the process: the concentration of the starting material, temperature, rate of alkali addition, stirring and the final pH. In food and related production, such operations must be tied to an approved instruction to prevent batch instability and emergency situations.
Protection when working with acetic acid requires a serious approach, even though the product falls into the food-grade category. A 70% concentration makes the substance corrosive: the vapours irritate the respiratory tract, and contact with skin or mucous membranes can cause a chemical burn. When decanting, dosing and preparing solutions, personnel use chemically resistant gloves, goggles or a face shield, protective clothing and ventilation of the work area. 70% food-grade acetic acid must only be used in labelled containers, without contact with incompatible reagents and without access for unauthorised staff.
Storage of 70% food-grade acetic acid is organised in tightly closed factory packaging, in a cool, ventilated room, separately from alkalis, oxidisers and raw materials that could react undesirably with the acid. The container must remain sealed, keep its labelling and be protected from mechanical damage. For a B2B buyer, storing acetic acid is not simply placing canisters or drums in a warehouse, but controlling the batch: quality certificate, production date, transport conditions, availability of spill containment means and a clear procedure for releasing the product into production.
Safety with acetic acid at a food enterprise is related to concentration, dosing, storage and staff training. Before using 70% food-grade acetic acid, the labelling, container integrity, batch documents and compliance of the raw material with internal specification are checked. When preparing working solutions, the acid is added to water according to regulations, avoiding splashing and rapid heating. The procedure in case of a spill is also determined in advance: limiting the area, using PPE, neutralising the acetic acid with an approved reagent, collecting the residue and checking pH after treatment.
